Fragrant saffron rice baked over vine-wood embers with tender rabbit, wild snails, and fresh rosemary sprigs.
The signature dish of the Mar Menor lagoon: rice cooked in a rich fish broth with ñora peppers (dried red peppers), garlic, and fresh fish from the lagoon — typically gilt-head bream (dorada), grouper (mero), or mullet (lisa). The rice absorbs all the flavor and turns a deep reddish-orange from the ñora.
A flaky pastry filled with seasoned ground meat (usually beef or pork), sometimes with hard-boiled egg or ham. Especially popular during local festivals, but available year-round in bakeries and tapas bars.
